Follow these steps to dress olives with soda
It is important that you know that caustic soda – popularly known as soda – is a substance based on sodium hydroxide (NaOH) that is very corrosive and has different uses such as, at the domestic level, it can be the outlet of pipes.
In the case of the preparation of olives, soda is not used as a dressing but is the quick method of removing the bitterness from the olives. And it is that we cannot directly take the olives from the tree and dress them because it would be inedible, but first, we must prepare them.
Likewise, it is essential that you know that soda is a dangerous product that we must handle with great caution since when this substance dissolves in water it generates a chemical reaction that causes the water to heat up and toxic vapors are released. That is why you should avoid any splashes by wearing gloves and clothing that protect your skin.
In this way, once you have the olives collected or purchased, you should put them in a bucket or plastic container without having to split or split them and cover them with water. Next, you should add the caustic soda very carefully and stir with a stick or some other long utensil. It should be noted that you will need very little caustic soda: 3 tablespoons of soda will be enough for 10 liters of water.
You should leave the olives to soak for about 8-10 hours to get the soda to act and completely eliminate the bitterness of the olives. After this time, you should remove that water and rinse the olives with water; We also recommend that you leave them for 24 hours. more to soak with clean water.
