Steps to follow How to make chocolate pudding
The first thing to do to start preparing homemade chocolate pudding is to heat the milk, cocoa powder and orange zest over low heat . The orange zest can be to taste, the more you put the more orange aroma it will have, but we advise you not to exceed a spoon so as not to overlap the flavor of the chocolate. Do not let the mixture come to a boil. Also add the essence of vanilla or cinnamon , choose according to your tastes. Now preheat the oven to 200ºC, up and down.
When the mixture is hot but not boiling, chop the chocolate bar and add it . Stir non-stop so it doesn’t burn or stick to the bottom of the saucepan. The chocolate can be dark or milk, as you like, but we recommend that you opt for a more intense flavor so that the pudding is not too sweet. When the chocolate has melted, turn off the heat but do not remove the saucepan so that it stays hot and does not solidify.
Now, in a bowl, beat the eggs and sugar until you get a foamy texture. Then, cut the bread into thin slices or make crumbs with it to make it easier for you to mix it with the other ingredients. And if you want to make the chocolate pudding for celiac, use gluten-free bread.
Add the cut bread to the milk and cocoa mixture and beat it with the mixer or the electric stirrers . When you have beaten a little, add the eggs and sugar and continue beating until you get a homogeneous and creamy dough.
Now is the time to prepare the caramel. This step is optional since not all chocolate puddings have a layer of caramel per top, but if you want to give it this touch, we explain how to do it. Add the sugar, lemon juice and a little water (1/4 cup) to a saucepan and heat it over medium heat. Do not stop stirring so that it does not sin or burn.
When the caramel in the pudding takes the right color (similar to honey) remove it from the heat and put it in a cake tin. With the help of a spatula, also bathe the sides of the mold so that all the pudding is covered with caramel. Let it cool a bit.
When the caramel has cooled a bit, add the chocolate pudding batter to the mold. As the oven will already be hot, lower the temperature to 180ºC, add the pudding and bake it for 35-40 minutes . Make sure that it does not burn or stay too raw, ideally it is a little golden on top. When you see it like this, perform the toothpick test which consists of pricking the pudding with a toothpick and seeing if it comes out clean or not. When it’s ready, put it in the fridge to chill, as the chocolate pudding is served cold.
Leave it in the fridge for a couple of hours and, after this time, remove it from the mold and serve it. Ready! As you can see, making chocolate pudding is very simple and allows us to take advantage of foods such as bread.
