To start preparing the fried milk, set aside half a glass of milk. Put the rest to boil with the lemon peel to flavor.

While the milk is boiling, mix the cornstarch, sugar, and a pinch of salt in another pot. Add the half glass of milk and stir with a few rods to avoid lumps.

When the milk starts to boil, turn off the heat. Let stand four minutes and remove the lemon peel. Next, pour the hot milk over the dissolved cornstarch, stirring in a circular motion in the same direction. Without stopping stirring, put the pot over low heat for about five minutes to eliminate the starch flavor.

Meanwhile, have a flat tray prepared, pour the cream on the tray so that it is approximately one centimeter thick. Let the milk cool.

Once the milk is cold , cut into squares of the size that interests you. Next, pass each square through flour and then through the beaten egg.

Fry the milk in plenty of hot oil. When they are golden on both sides, remove the fried milk and place it in a source.
