It is the simplest recipe for making sponge cake that you will find. A pastry classic that you have most likely even done more than once. But in this case, it will be even better because you don’t need as many things.

Preparation of Sponge Cake
Turn on the oven at 180ºC. Meanwhile, in a large bowl we put the sugar. Separate the yolks from the egg whites and put the first ones in the same bowl as the sugar. The second in a different bowl.
Beat the egg whites until stiff snow. It will take about 8 or 10 minutes depending on the mixer. When you see that you can put the bowl upside down and the whites do not fall, that is when the whites are already.
Separately you have to beat the yolks with the sugar until they blanch. Add the sifted flour over the mixture of yolks and sugar. And it is incorporated, with the help of a spatula making enveloping movements.
Maybe because of the size of the egg yolks, it is not always the same amount. And here it will show when the flour is added. It is in these cases the problem is solved adding a tablespoon of water to be able to integrate all the flour until obtaining a smooth mixture.
With a spatula, combine the egg whites until stiff with the mixture. This movement must be done as gently as possible so that as little air is lost. And this is one of the most important points because the sponge cake does not have any type of yeast. Then all its fluffiness will depend on the air that remains in the dough once everything is mixed.
If you want to make a cake plate, you have to spread the mixture on a baking sheet lined with baking paper and bake at 180ºC for 8 minutes. You have to click with a skewer stick to check if it is ready, but leave a little more.
On the other hand, if you want to make a conventional sponge cake , line a mold of 22 centimeters in diameter or a rectangular mold of about 30 × 12 centimeters with baking paper. Then the dough is thrown and you have to put it in the oven preheated to 180ºC for 30 minutes. After this time, the same is done with the skewer stick.
The last step is to take it out of the oven and wait about five minutes for it to cool down. Then unmold it and let it cool a little more. And you are ready to enjoy it.
